Dandelion

Botanical name: Taraxacum officinale

Part used: Root, leaf and flower

Gifts from this plant: Chop up fresh dandelion leaves and add them to your salad or steam them with other greens. Dandelion greens are a superfood, high in vitamin A, K, potassium and calcium.

The bitter taste of dandelion leaf and or dandelion root tea helps support liver and gallbladder function. Dandelion leaf and root stimulates the flow of bile, which helps break down cholesterol and fat. Dandelion greens added to your food or a cup of dandelion tea are both great digestive aids. I also really enjoy drinking roasted dandelion root tea as a non-caffeinated afternoon pick me up.
